Creamy Cashew and Basil Dip

For all our meat loving fans who are really worried about being on the detox….eating raw (or vegan) does not have to mean boring food!

Protein comes in many forms!

It's just about learning how to use vegetables, fruits, nuts, seeds and grains to supplement your carnivore ways.

As promised I'm creating the best recipes for you to enjoy on the Global Community Detox when we get started 25th of September with our 3 day Raw Food Cleanse.

Here is a simple dip to try that is full of vitamins including E, K and B6, antioxidants and minerals.

Tasty and easy to make.  

Next post I'll show you how to use it as a sauce for a raw main course!

Creamy cashew and basil dip

Ingredients

  • 1 cup cashews, soaked until soft*
  • 1/2 cup water
  • 1 1/2 tablespoons fresh lemon juice
  • 1 teaspoon miso
  • 1/2 cup packed fresh basil leaves, coarsly chopped
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper

Optional:    You can add 1/2 teaspoon of fresh garlic for extra taste!

Method

  1. Blend cashews, water, lemon juice, and miso until smooth.
  2. Add basil, salt and pepper + (chopped garlic). Blend on lowest speed so the basil leaves are just chopped not blended. 

*Make sure you remember to soak the cashews in water for about 3 hours before you make this recipe!

Serve with vegetable crudités.  Carrots, celery, cucumber or just spread on a rye cracker!

Dip cremoso de anacardo y albahaca

Para nuestros fans de la carne que les preocupa hacer un detox... ¡Comer crudo (o vegano) no tiene porque significar comida aburrida!

¡La proteína se presenta de muchas formas!

Se trata de aprender a usar las verduras, frutas, frutos secos, semillas y cereales para suplementar tus necesidades carnívoras.

Como he prometido, estoy creando las mejoras recetas para disfrutar durante el Detox de la Comunidad Global que empezará el próximo 25 de septiembre con la limpieza de 3 días a base de alimentos crudos.

Aquí tienes un dip sencillo repleto de vitaminas como la vitamina E, K y B6, además de antioxidantes y minerales.

Sabroso y fácil de hacer.

¡En el próximo post te explicaré cómo hacerlo como una salsa para un plato principal crudo! 

Dip cremoso de anacardo y albahaca

Ingredientes

  • 1 taza de anacardos, remojados hasta que estén suaves*
  • 1/2 taza de agua
  • 1 1/2 cucharadas de zumo de limón recién exprimido
  • 1 cucharadita de miso
  • 1/2 taza de hojas de albahaca frescas cortadas finamente
  • 1/4 cucharadita de sal marina
  • 1/4 cucharadita de pimienta fresca molida

Opcional: Puedes añadir 1/2 cucharadita de ajo fresco picado para darle más sabor

Instrucciones

  1. Mezcla en una batidora o robot de cocina los anacardos, el agua, el zumo de limón y el miso hasta que la mezcla quede suave.
  2. Agrega la albahaca, sal y pimienta + (ajo picado). Mezcla a baja velocidad hasta que las hojas de albahaca estén solo un poco picadas, no batidas completamente.

*Recuerda remojar los anacardos durante 3 horas antes de hacer esta receta.

Sirve con verduras crudas. Zanahoria, apio, pepino o sobre una galleta de centeno.

Raw Cacao Truffles

One of the most exciting delicacies we can have on the Global Community Detox is raw chocolate.

Little treats matter SO much on a detox!  Especially if you are missing your wine, tea and coffee!

Harvard researchers tell us that cacao decreases blood pressure, improves blood vessel health and improves cholesterol levels.

The real health benefits come from polyphenolic flavonoids in cacoa.  Flavonoids are antioxidants and are generally found in tea, wine, coffee, fruits and vegetables.  They have been proven to prevent heart disease, fight cancer, act as a natural antidepressants and give us longevity due to their antioxidant boosting effect.

Cacao contains very small amounts of caffeine but not enough to elevate blood sugar the same as other foods or beverages that contain caffeine.  In fact has less than 1/20th the amount of caffeine found in coffee.

Low in calories, low in fat, high in fibre, and full of essential minerals like calcium, zinc, magnesium and potassium.

It's nature's perfect superfood!

Ingredients:

  • 2 cups medjool dates, pitted
  • 1/2 cup finely chopped cacao
  • 2 tablespoon organic coconut oil, softened
  • 2 tablespoon unsweetended cacao powder, plus more for dusting
  • 1 teaspoon sea salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne

This recipe couldn't get much easier!

Stick everything in a food processor and pulse everything together into a paste.  With lightly oiled hands, roll the paste into a long 'sausage', with a sharp oiled knife cut into bite sized pieces.

Sprinkle with cocoa powder to finish.

These tasty little morsels should last up to one week in the fridge.

Make sure you don't go crazy with them as they are high in calories and too much cacao can have side effects similar to having too much caffeine!

Trufas de cacao "raw"

Una de las exquisiteces más tentadoras de las que podemos disfrutar durante el Detox de nuestra comunidad global es el chocolate crudo.

¡Los pequeños caprichos son MUY importantes durante un detox!  ¡Y todavía más, si echas de menos el vino, el té o el café!

Científicos de Harvard han probado que el cacao  baja la presión sanguínea y mejora la salud de los vasos sanguíneos y los niveles de colesterol.

Los verdaderos beneficios para la salud provienen de los flavonoides polifenólicos que contiene el cacao.  Los flavonoides son antioxidantes que normalmente se pueden encontrar en el té, vino, café, frutas y verduras.  Se ha demostrado que previenen las enfermedades cardíacas, ayudan a combatir el cáncer, actúan como un antidepresivo natural y nos proporcionan longevidad gracias a su efecto antioxidante.

El cacao contiene una cantidad muy pequeña de cafeína, pero no la suficiente como para elevar el azúcar sanguíneo como en otros alimentos o bebidas que contienen cafeína.  De hecho, el cacao tiene menos de 1/20 de la cantidad de cafeína que tiene el café. 

Bajo en calorías y grasa, y lleno de fibra y minerales esenciales como el calcio, cinc, magnesio y potasio. 

¡Es el superalimento perfecto de la naturaleza!

Ingredientes:

  • 2 tazas de dátiles medjool deshuesados
  • 1/2 taza de cacao finamente cortado
  • 2 cucharadas de aceite de coco orgánico suavizado
  • 2 cucharadas de polvo de cacao sin azúcar para espolvorear
  • 1 cucharadita de sal marina
  • 1/4 cucharadita de canela
  • 1/4 cucharadita de cayena

¡Esta receta no podría ser más fácil!

Agrega todo en un robot de cocina y mezcla hasta que se forme una pasta.  Con las manos ligeramente cubiertas con aceite, enrolla la pasta en forma de “salchicha” y, con un cuchillo afilado y cubierto con aceite, corta en trocitos.

Finalmente, espolvorea los trocitos con polvo de cacao.

Estos deliciosos bocados pueden durar hasta una semana en la nevera.

¡No dejes que estas delicias te vuelvan loco! Tienen muchas calorías y tomar demasiado cacao puede causar efectos secundarios como cuando tomas demasiada cafeína!

What I like is that it explains the fundamentals!

Global Community Detox - Day 2 of the 3 Day Raw Food Cleanse

How’s it going? 

As you will no doubt have realized by now, eating raw isn’t all about apples and carrots.  It’s about feeding your body nutritious food that your cells can absorb easily to promote the healing process.

Most people do not realize how amazing raw food can be, but be prepared for a new world once you understand what it means to prepare, explore and eat raw.

Raw can be gourmet!

Christine Mayr is a raw food gourmet chef, author of RohVegan and the owner of Crua Raw Gourmet Cuisine.

Here are some words of wisdom from Christine and her philosophy of raw food.

What is raw food?

Everyone knows it is healthy to eat fresh, uncooked fruits and vegetables every day.  A diet that includes whole, ripe, raw organic fruits and vegetables, sprouted nuts, seeds, and grains can greatly contribute to achieving optimum health.

Organically grown raw and living foods provide high-quality nutrition while naturally supporting both proper digestion and a well-functioning immune system.  Eating these life-giving foods helps to alkalize the body, a key factor in building excellent health.  When the body is in an alkaline state, it is better able both to absorb nutrients and to expel toxins more efficiently.

A standard diet like eating meats, breads, dairy products, processed/cooked foods, caffeine, and alcohol create an acidic state in the body, which contributes to a variety of health problems.

Another important key to excellent health is excellent digestion.  The human body requires enzymes to digest food.  Each whole, raw food contains naturally occurring enzymes designed to help break down that particular food.

Sprouted (germinated) nuts, seeds, and grains are living foods. When nuts, seeds, or grains are soaked, enzyme inhibitors are removed, and germination can occur.  Germinated foods are easier to digest because the availability of enzymes is increased, enhancing the life force and vitality in the food, and making all of the nutrients readily available and easier to assimilate.

Whole raw foods are also rich in phytonutrients, enzymes, and antioxidants. Research suggests that phytonutrients may help reduce the risk of heart disease, stroke, certain cancers, and type II diabetes.  Phytonutrients may also help slow the aging process and enhance eyesight and brain function.

Other important keys to health are pure water, sleep, rest, exercise, laughter, and love!

The philosophy of raw living lifestyle

It’s a holistic approach. It focuses on nourishing the body through healthy food as well as on the physical, mental, emotional, and spiritual well-being of the whole person.

Care of the environment is a part of the raw food philosophy.  Making sustainable choices and living in balance with the environment is important.  Choosing seasonal and local foods is recommended. Raw food is not just about doing something for your self it is also about doing something for others.  This means living in a conscious and caring way.

Exercising, resting, and having a positive attitude is important as is spiritual well being (that is an area that is self-defined; it depends on what works for you).

Raw foods are defined as organic vegetables, fruits, nuts, and sprouted seeds and grains that contain living enzymes.

Enzymes are present in all living things.  Without enzymes, human life is not possible. They act as catalysts breaking down fats, carbohydrates and proteins.  They are crucial in digestion, elimination and in providing nutrients for the body. They do not exist in processed and cooked (over 115 degrees F. 46 degree C.) foods.  This is because enzymes are very sensitive to heat. So the body has to work hard using its own enzymes in the digestive process.  Raw foods on the other hand contain enzymes thus releasing the body from over-working, allowing it to rest, and thereby slowing down the aging process and time for self-healing.

Nutritionally speaking living foods are the richest sources of enzymes, oxygen, chlorophyll, vitamins, minerals, essential fatty acids and fiber and contain the proper ratio of alkaline to acid minerals.  An enzyme can be compared to a skilled worker who has been trained very well to perform a specific task. Without him all work stops.
