A quick side dish or vegetarian option to accompany lentils, brown rice or wild rice!
INGREDIENTS
1 kg carrots
1 tablespoon olive oil
1 tablespoon honey or agave
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
Salt and black pepper to taste
2 tablespoons fresh mint (chopped)
METHOD
Pre-heat oven to 400 F
Peel the carrots
Combine all ingredients & toss with carrots
Season to taste
Cook on baking paper for 20-30 mins.
Serve topped with chopped fresh mint
Serve with lentils with fresh mixed herbs and grated fresh carrots!
